Healthy meat free Lasagna

Everyone likes a good lasagna. Unfortunately most of the time this is not the most healthy choice. That's why I want to share with you a healthy version of this awesome dish.


What you need:


9 Lasagna leaves.

300 grams of cottage cheese.

4 table spoons of parmesan.

Italians herbs.

Garlic powder.

4 cloves of garlic.

1 onion.

Chopped mushrooms.

2 cans of diced tomatoes.

Shredded mozzarela (light version if possible).


Directions:


- Pre heat the oven to 180 celsius.


- Chop the onion, garlic and mushrooms and saute on low heat. Add the diced tomatoes and leave on a low fire for about 5 minutes.


- Mix the herbs and garlic powder together with the cottage cheese and parmesan until it is mixed properly and forms a paste like substance.


- Get your lasagna pan or oven tray and start with adding a thin layer of sauce followed with a layer of 3 lasagna leaves. The next layer will be the cottage cheese mix and mozzarela followed by 3 lasagna leaves and more sauce. Repeat this until you run out. Save some mozzarela for the top layer.




Cover the lasagna with aluminum foil and bake voor 40 minutes on 180 degrees celsius. After 40 minutes remove the aluminum foil and bak for another 20 minutes.
