Quinoa stuffed bell peppers

Get in shape with these super healthy quinoa stuffed bell peppers. These are perfect for either lunch or dinner by themselves or on the side of good piece of meat. I had a nice steak on the side after making these. But with the quinoa and the black beans you are already getting all the protein you need to get the results you deserve.


What you need:


  • 300 grams of quinoa.

  • 300 grams black beans.

  • 100 grams mushrooms.

  • 2 sweet onions.

  • 5 cloves of garlic.

  • 6 bell peppers.

  • 1 table spoon of olive oil (to cook).

  • 1 table spoon of honey.



Directions:


1. Boil the quinoa in 1 liter of water for 10 minutes on low fire. When it's down, rinse the water and stir in the table spoon of honey.


2. Chop the mushrooms, onions and garlic and stir fry in a pan with olive oil for about 3-4 minutes. Add the beans and stir everything on a low fire for another 2-3 minutes.


3. Add everything together in one pan and stir well.


4. Hollow out the bell peppers and fill them up with the quinoa mixture.


5. Place the filled peppers in an oven tray and cover with alluminum foil.


6. Place the tray into the oven and let it bake for 60 minutes on 180 degress celsius.


Tip: add a bit of water to the oven tray. This will create a steam which will cook the peppers nice and soft.
